Chicken Basil Fried Rice and Slow Cooked Chicken.

It's not yet Christmas but I wanted to prepare something special. So here is this morning's Best of Me breakfast.


First I cooked an omelette with Chicken bits and lots of Basil leaves. I actually bought a bough of Basil to plant in my balcony garden and I really do not have any recipe in mind before they will wilt so this morning, out of the ordinary, added Basil to my omelette. But wait, I found out we have day old rice so instead of omelette, I finally decided to break it and mix with my day old rice. And voila! Chicken Basil Fried Rice.. now, where did I get the chicken bits?

So last night I decided to slow cook chicken in its own juices plus the spices. I simply placed peppercorns, bay leaf, cloves, star anise, crushed garlic, onion and ginger at the bottom of a peppered and Salted whole chicken and left it to cook overnight. No other liquid except the juices and fat rendered from the chicken. The chicken was so tender that when I flipped it, a lot of bits fell so I gathered them and cooked them with my supposedly omelette which is now what it is.. that explains missing wings.. hahaha

So yeah. This is what we're having for breakfast today. 😋

HAPAG NG PAMANA – Celebrating Cagayan de Oro City and Northern Mindanao Food Culture and Heritage

Celebrate Cagayan de Oro and Northern Mindanao Food Culture and Heritage this April 23 and 24, 2022 from 10:00 am to 9:00 pm at the Activity Center of Ayala Centrio Mall with HAPAG NG PAMANA! This is brought to us by the National Commission for Culture and the Arts in celebration of Filipino Food Month.

HAPAG NG PAMANA is organized by Infinite Lotus Productions. It is supported by Ayala Centrio Mall, Department of Tourism Region X, and COHARA. It celebrates Cagayan de Oro City and Northern Mindanao Food Culture and Heritage for Filipino Food Month or Buwan ng Kalutong Filipino.

On April 23 & 24, 2022 from 10:00 am to 9:00 pm at the Activity Center, Ayala Centrio Mall the culinary history, cultural heritage and resources of the Philippines will be celebrated through artistic freedom and expression. This will preserve and protect culinary tradition and ensure that it is passed on to the next generation.
The component activities of this two-day event are the Food Expo entitled“Hapag ng Pamana” featuring our Regional Culinary Heritage in Northern Mindanao, film shows of winning entries from the Culinary Cinema 2021, cooking demos by select establishments featuring heirloom dishes, a digital exhibition of food art photography, and a showcase of artistic performances.

This is in fulfillment of Proclamation no. 469 s. 2018 declaring the month of April as “Filipino Food Month” or “Buwan ng Kalutong Filipino.”
