Happy Monday

Last day of holiday. Tomorrow is another class day. In the Philippines, it's Andres Bonifacio's 157th birthday. Woke up late today so cooked Pork short ribs saluted with French Beans and Mung Bean Sprouts in Roasted Black Sesame Oil and Soy Sauce. 
This is actually a dish that reminds me so much of home. 
This afternoon I baked cake. Something to keep me happy with the ice cream I bought yesterday. I will share the recipe in the next post.

Coconut based Ice Cream

Still on holiday, and making the most of it. It's quite hot right now so I thought of enjoying ice cream with my housemates. So I ordered from Food Panda. 

Couldn't read its name and flavour, but tasting it I know the base is coconut.
Best with chocolate wafers, and I am thinking of making it float on coffee again.. Hmmm..

No Butter Fudgy Brownie

This is a no butter fudgy brownie that's so good.. 

Tr. Grace baked this after we tinkered my DIY light bulb which needs adjustments in the materials to be used in order to male it work.. 

I love the crusty, chewy and fudgy texture of this baby.. We ate while it's warm.. Not with milk though, but with laughter as we takes about each other's day..

Lechon Belly for my brother's birthday

Today is my brother's birthday. So I am cooking this belly that I bought weeks before from our favourite online meat shop. 

The funny thing about this is that, it doesn't have skin on. No crackling skin that Lechon Belly should have. 
But I love its juicy meat... 

How to do it is very easy.. Of course, because there was no skin I just had to skip the part where the akin gets smothered in vinegar to achieve the crackling crispiness.. 
I am glad my small oven did a wonderful job.. Somehow it cooperated with me.. He he he.. 

To cook this in the oven you will need to prepare a tray with water and spices.. It works two ways. First it catches oil drippings as the pork belly cooks, and second, the flavours from the steam will also enhance the flavour of the pork belly as it cooks.
It's actually just garlic, ginger, star anise, pepper corns and dried chillies.

The most challenging yet most satisfying task was putting the tie around the belly while taking pictures, and doing all that by myself.. Hahaha..

Oh well, all's well that ends well in the tummy..

That was the birthday dinner I prepared with gravy from real chicken liver, and dessert of Sweet Potato Cinnamon Spice..

It's Diwali, No Class Today

And I ordered this last night because I was craving for their pizza. And of course, I wanted to avail the freebies, especially the Cheese Cake, which is quite good, I must say.


And yes, today is a holiday but I am swamped with loads of stuff to finish, not to mention, make a video for my new lesson in class. I was thinking of not cooking today, and just enjoy pizza, pasta and cheese cake.. 
l ordered my all-time favourite, 1 medium Deluxe Pizza, and got Spaghetti Carbonara as freebie.
I also got regular Ham Pizza, which is also a favourite...

And I got a Cheese Cake for free..
Best part, I am customer number 1 because I ordered last night for today.. Hahaha.. So I got a free cup of coffee..
Their coffee is good, by the way..
But of course, I also ordered their brownie - to die for.
Central Park has always been my favourite pizza place here in Mandalay. I like the fact that their pizza is baked the traditional way so it's not greasy like those from other pizza places. Plus the flavours are authentic. 

This is not a paid ad. I am just a happy customer, as always.
