Eggplant Chicken Blood Stew

Ingredients:

Diced Chicken Liver, Breast, Intestines and Gizzard
Diced Eggplants
Diced Shallots, Ginger, Bell Peppers, Onions
Soy Sauce
Chicken blood mixed with vinegar and lemongrass


Procedure:

Heat a little oil in a pan and saute Diced Shallots, Ginger, Bell Peppers, Onions. 


Add the Diced Chicken Liver, Breast, Intestines and Gizzard, and continue sauteing until the turn brown. Add the Diced Eggplants, soy sauce and the chicken blood that has been mixed with vinegar and lemongrass. 



Keep sauteing until cooked.

Cassava Pudding



The Cassava was boiled, and there were just too many of them. This, I mentioned in my previous post. If there are so many, we need to find a way to recreate them and make them more appealing to the people in the house. 


So, from the boiled Cassava, we went to look for some recipes to tweak or remake.. 


We didn't find any, so we had to think of a recipe and came up with the simplest bread pudding recipe we have been making. Instead of the bread, we used the boiled Cassava. 



To experiment, we used a few boiled stems, mashed them and mixed butter, condensed milk, cream and cheese. 


And because it was just an experiment, we baked it in our oven toaster instead of the big oven. Baked it about 25 minutes, and this is the result.. 


It's flaky, crunchy and chewy on the inside. Yummy.. The texture is soft, but you could imagine a very soft textured Cassava cake. Because this is successful, we are going to make more from the remaining boiled Cassava stems..

Blessings From Our Mechanic's Farm and Today's Lunch



My father, after knowing that his mechanic had nowhere to go, offered our vacant lots in Balulang for him to stay, for his shop and for his family to temporarily live in. As the months progressed, they have made the vacant lot into a mini farm until it progressed and grew. Well, it is added income for them since he only has a few people to serve as mechanic. My father never asked for any rent from them, and although he never asks for a fee whenever my father would summon him for mechanic duties, my father still pays him. Even if he would refuse the payments, still, my father pays him because my father knows that their family needs it most. 


With the said set up, years after, we enjoy being given the free fruits of their labor from the farm. We were told that the farm is what gives them blessings and from time to time, they share their blessings with us too. 


Yesterday, my brother went there to bring wood. The wood that our carpenters used and no longer use here in Opol. There were too many of them that my father said the said wood can be used to make a house in the vacant lot. After all, there is still plenty of room for another house there. We were delighted to find that our mechanic and his wife sent us two free range chickens and some fruits and vegetables. 

So today, we cooked them for lunch. We dressed the chicken, and were able to cook two dishes from them.  The first one is my experimental Eggplant Chicken Blood Stew, and the second one, Tinolang Manok Bisaya



The Eggplant Chicken Blood Stew utilized some of the eggplants as well as portions of the chicken. It was quite good really. I shall have a separate post for its recipe. 


Tinolang Manok Bisaya utilized the beans, the Malunggay and most parts of the chicken. It was yummy. Also from the farm are huge Cassava.. Kamoteng Kahoy, as what we call them in Binisaya. My mom cleaned them already and we were thinking of what to cook them to, but we settled with boiling them, hahahaha..  

We didn't cook rice anymore for lunch. Cassava is carbohydrates too. I love its golden yellow color. It is naturally sweet. 


These two, they are not from the farm, but from my mom's suki. She bought the Malasugue the other day and it was frozen. The fried fish, Lipti, was bought earlier this morning, before they went to church.

Preparing for Lunch, Remembering and Blessings

Here is what my sister is cooking for lunch.. These Tahong and Fish recipes remind me the time Lili just arrived into this world.. 


Tahong or Mussels are rich in vitamins and minerals and helps mommies to have more milk for the baby.. 


So does this fish recipe.. 


Remember the watermelon in my previous post? The men hired by my father cleared the front lawn and the watermelon's roots came with the clearing. We had no choice but to harvest it. We were surprised to see that it was ripe already, today.  It just grew.. we didn't plant it, and now we shall have watermelon for dessert.. Blessings do come in so many forms, small or big, they are worthy of gratitude..

It Just Grew..


We were on our way yesterday to school and while my father was maneuvering the car to a halt, this is what caught our eyes.. Watermelon growing in our front lawn. We didn't plant it there, it just grew? How? Hmmm.. My mom said that probably someone ate watermelon and spew the seeds there, and it grew. Rain and sunshine fed it, but not us. Thus, we consider it a blessing. 


I shared the photo I took with my co teachers and one of them said that it was a sign for good things to come. Good luck is what it is meant. If that is so, then I accept that explanation, hehehe..

From Lechon to Bamboo Shoots

My friend's mom, after much conversations with her on the phone during the week-long confinement of my friend at the hospital, sent me this huge container full of  Lechon from yesterday's fiesta celebration. I didn't know what to say, but thanked her for this. I mean, I didn't expect anything in return for comforting her and calming her during the nights she would call about my friend's sickness. 


Anyway, as I do not eat pork much these days, I gave the Lechon to my sister, who cooked part of the Lechon into some Bamboo Shoots dish.. 


The other half was baked to reheat the Lechon. Of course, the Bamboo Shoots dish with the Lechon slices was yummy..  You can still taste the Lechon there, but the dish isn't that overpowering anymore.. When I arrived home, it was tempting to eat.. hahaha.. I tasted it to be able to blog about it.. Just a taste.. :-)

Happy Fiesta Cagayan de Oro

While Cagayan de Oro City celebrates the Feast of St. Augustine today, we here in Opol are just having a simple family time as I do my take home work in preparation to tomorrow's release of report cards in school. 

Anyway, as usual, Spaghetti is the prime request of the kids.. They never tire of our Spaghetti at home, perhaps because each time we cook Spaghetti, the recipe is different but still yummy.


Then there is the unforgiving HUMBA.. ughhh.. Father says it is for the mood of the fiest in CDO, lol.. It is yummy alright, but somehow we had to be careful of the pork fat.. 


Then there is this Maja Blanca with no coconut milk.. Healthier option than the old family recipe.. 


And the fish is the perfect one for me.. 


Thank you mom and sister for cooking these food.. Happy Fiesta Cagayan de Oro City.. Thank you Thank you for the holiday-- a time to bond with family..

Salo-salo at the Office: Christening, Birthday & Death Anniversary

So it's another salo-salo in our office. It's one of those days when office mates have celebrated events and occasions in their lives and they want to extend it to us in school.

Sir Gerry brought his signature dishes, the Spicy Yellowfin Tuna and Balbacua that his mom cooks so well, as well as Indian sauce. We learned that Sir Gerry's dad passed away a year ago and it was his death anniversary. Maam Isabel brought Lechon Paksiw from a niece's son's christening. Maam May brought boiled Bananas and Sweet Potatoes with matching salted fish for a simple birthday celebration of a friend of hers.
