Pata Tim ni Sweetie

My sister is a great cook. Here's one recipe that she did today for lunch. The pork used here is still part of our Christmas noche buena budget, which we did not cook anymore due to the fact that we already had too many pork recipes that evening, which are still in the refrigerator.. hahaha.. We do not eat much pork as we used to-- and that's good :-) 


The twist in my sister's recipe here is that, she made sure there are lots of healthy ingredients in the dish, to balance with the pork itself. So shown here are Bananas.. which is a healthy alternative to rice.. It also adds flavor to the dish, with its natural sweetness.. 


Make sure to add it when the pork is already cooked, and it is already tender. 


To serve, we used a rectangular deep tray. First we arranged the bananas on the sides, took the whole pata and placed it in the middle. Picked up all the other ingredients such as the pineapples, the mushrooms, and placed them on top of the pata. The remaining sauce then is drizzled on top. 


It is optional to bake this for at least 5 minutes, as this is already good to go. 


Take off the fat and that plate above is already a healthier way of eating Pata Tim... By the way, I will share the recipe on the next post..

Baked Hamonada

After cooking the Hamonada for Noche Buena last December 24, 2014, we actually had so much pata that we did not serve them all for the Noche Buena table. On the 25th, relatives came for lunch and we serve them, but this time, we took out the fat before serving. My cousin who is a diabetic should not eat them, and may eat them if he sees them, so might as well do it before serving so he wont be tempted to eat the fat.. After that, all pork recipes were kept in the refrigerator. Too much makes you feel "umay".. Besides, we had fish recipes too, so we kind of enjoyed them first, hehehe.. 

After two days in the refrigerator, it was time to reheat the Hamonada. This time, we baked them for a different look and taste. The pineapples were crunchier and the meat was better baked. Juicy on the inside, while the baked outer layer is simply yummy.  


We didn't add sauce as the flavor in the meat has retained its spicy-sweet nature. I should have baked it before serving during Noche Buena, hehehe.. but then, it was better off this way.. Recycled recipes need upgrades with less fuss. But of course, eat in moderation is always the rule..

Crunchy Cheesy Sandwiches


This is not Christmas food. But this feels better than all the Christmas sweets.. The warm crunchy, cheesy sandwich is best on a cool weather. 


Plus a warm cup of coffee.. yum..

Last Meal with Guests for 2014

Our aunt and cousin are leaving today. For our last meal with them for 2014, we had Pork Sinigang and Ice cream.. 


All the people here are burpin their goodbyes, hahahahaha... 


Hope to see you two again..

Creamy Mango and Jelly



My sister Sweet and I are prepping for our Noche Buena feast for tonight. For desserts, one of them will be this Creamy Mango and Jelly. My sister got the idea from one of the foods given to me during our class Christmas party. I couldn't eat it in school as I was already full at that time so I took it home.. and Sweet decided to make her version of the dessert for tonight... 


First, you need to set two or three flavors/colors of Jelly. These are ready to make jellies from our very own store. When they have set, slice them to desired sizes and shapes.  


When done, prepare the creamy mixture of cream and condensed milk, and pour over the jellies.. 


Add the sliced mangoes, and mix again.. 


When done, refrigerate until it is time to serve.. The cooler the treat, the better.. Just do not freeze.. Freezing will ruin the taste as well as the presentation..

Mr. 8 Burger Pizza

We went down to look for dinner food. We bought our fave Siomai sa Tisa and whatnots, and the Little Miss insisted on pizza. In this part of Macasandig, this is what we got... 


Solo size--- not bad for only P 45.00


And it has a presentable box.. As to the taste, well, it's ok.. filling, if you are hungry..

Snack-time for the Little Miss

We went to the mall today to buy a few things. We were supposed to buy for our Kris Kringle at home but we couldn't find anything yet.. She said she was hungry after an hour or so, and lined up, by herself, to buy her food. 


First she bought her Blueberry Cream-cheese Waffle.. 


Ate a little, bite after bite, while we were moving around, and proceeded to Bon Appetea for her drink, after she finished her waffle. 


I guess she was really thirsty, that she finished most of the large size Peppermint Patty. She really loves Peppermint and Chocolate-- 


We continued moving, with her finishing her drink in the process.. 


By the time I announced that we shall have some snacks, she said she was already full.. Hahahaha..

Gender and Development Seminar


Today we attended our year end Gender and Development Seminar and Christmas Party, plus the Tribute to our retired School Principal and of course, the Honoring of Retirees...  The program went non-stop, and because no snacks were served, people from our table were busy munching this.. hahaha... 


Unlike before, we had our GAD in the afternoon, so we budgeted the time for three activities all in the morning and then lunch was served. This was what we had.. 


We didn't have snacks in between, which is good, and the best part is that, I got to meet a distant relative who I have admired since I have learned about him, and I have wanted to meet him in person for quite a long time already. In fact, it is one of my life's bucket list.. 


So this year's year end GAD has fulfilled such wish.. Too bad my late Tita Marivic and late Tito Ben were not the ones who made us meet. When I was in Manila, the two have wanted for me to meet him, but time just wasn't on our side. But today--TODAY :-) Thank you Universe..
