FISH COCO BITES PRESENTATION

>> Saturday, April 25, 2009

Two years ago I enrolled myself at ALS (Alternative Learning System) for the certificate needed for a planned trip abroad... That to be honest. I am a good cook but a certificate is needed to prove it.... In fact, cooking is a skill my family is blessed with on both my mother's side as well as my father's side. Both my parents love to eat and cook... At a young age, I have dreamed of becoming a chef, or a restaurant owner. But, as years passed, I have discovered skills and talents that I find more valuable and challenging. Cooking then became a hobby only. A very good hobby in fact... lol...

Before Lili came, I planned to go out of the country to find my life... my calling. So I enrolled myself in Nursing as a second course. By God's blessing, Lili came and everything changed. I tried so hard to find out what I am really called for... Now I know... Anyway, the slide I am sharing here is our group presentation for Fish Coco Bites... a healthy and economical way to present Tuna... enjoy...

TAPIOCA

I was bloghopping and I came by OUR FAMILY STORY this was what I saw there. Just this evening I took a photo of a dessert which was never absent on Sundays in our house. It's called TAPIOCA. Actually the reason why it is not absent is because it can be prepared with a variety of ingredients, and may have different presentations. The taste of course, will depend on the ingredients you use. So with the picture already available, I opted to join this meme. Besides, I LOVE FOOD...ahehhehehe...

For today's TAPIOCA DESSERT, the ingredients used are a.) Cubed Cheese, b.) Apple Chunks, c.) Cantaloupe Strips, d.) Sweet Corn Kernels, e.) Milk and Cream and of course the star of the show, f.) TAPIOCA.

Last week we had the Banana-Mango Combo...yummy!!!

KAKANIN

We had this for snacks, matched with a cup of hot chocolate. Hot chocolate is made from native chocolate we call "tableya" and traditionally prepared boiled and constantly whisked inside the clay pot...but now, it is simply boiled in ordinary pot and whisking is not so much done as we were busy cleaning also. When it came to a boil, that's the only time we stirred it. The latter is so wrong, as my mother would point out, it is still best to have it the old fashioned way. I do not have a picture of the hot chocolate because I forgot, lol... but the partnered food we call "kakanin" or food made out of ground rice...the big ones are called "Puto", so with the small white ones. They are actually best eaten with "Dinuguan" or Chocolate Stew in English...but since it will be partnered with hot chocolate, then there is no need. The brown ones are called "Kutsinta", I do not know the English name for this but let me just say that that is my favorite. They are best served with freshly grated coconut on top. Truly a yummy treat, but, caution dear friends...they are made from rice, hence...CARBO CAUTION there...

Sea Shells

Sea shells are a good source of calcium, protein and all the vitamins and minerals that the body needs. I remember, when I was yet breastfeeding Lili, my father had his favorite seafood vendor deliver seashells to the house. And he would personally make a soup out of them. He would then let me drink the soup... My father loves me and Lili very much... that I know...

And thanks to the soup, I had lots of milk for milking time---

PIZZA MANIA

>> Thursday, April 23, 2009

A few months ago, we spent our Family Day at SM. I just want to share the food we had. This is Pizza Milania from Pizza Hut. It was good, but while eating this pizza, I was thinking of Da Vinci's in Cebu. It was our favorite hang out, my friends and I. I just love their white sauce pizzas.

Anyway, the pizza my daughter chose is yummy. In fact all three of us finished more than how much we needed to.

As proof, see the picture. I only remembered to take a picture when we were already in the last half... hahaha...

Good thing Zarelle reminded me to take a picture of the food.

TATAY'S BIRTHDAY CAKE LAST YEAR

October 24 is my father's birthday. Last year we had a simple family gathering. We had ordered the usual Lechon, the National Food of The Philippines, and of course there were sweets and all other recipes my mother and sisters cooked. I was busy with the day's activities both in Marymount and at Honeysweet Learning Center that I did not have time to help them out in the kitchen. So I decided to buy the birthday cake instead... However, when I reached home, the two kids, Lili and River, who were so excited of the preparations asked me what I brought with me so I told them that it was their gift to TATAY... lol, and all the more they became excited, they started singing the happy birthday song with only the repeated happy birthday lyrics...lol... it was so funny and I found it so cute, I decided to have their acts on video... sadly, I can not share the video because it's too large a file...

BULALO

This is Bulalo. A stew made with a beef shank bone.
When we were in college, we used to drink, my friends and I.. Well, not heavy drinkers really... but when we feel we have had too much drinks, we simply go someplace else to order this soup...
And mind you, this soup really is something... what with the hot soup and the conversations we've had while devouring the meat on the bone, ahahaha...
I miss those days...
But hey, who says Bulalo is limited to that purpose only? We can have Bulalo anytime, as there lots of restaurants here that serve good Bulalo... It's the company that I miss... mainly because, some of them are no longer with us...
So guys, cheers to you, and a bowl of Bulalo to go...

JOLLIBEE FOR LILI

Zarelle always liked Jollibee Spaghetti. Today, she asked me to buy her favorite foodies. Jollibee Spaghetti, burger and fries. I bought myself a CHAMP. hehehe....

Whenever we go out, our stop is always Jollibee. Unless of course some changes occur and we end up eating somewhere else. Hmmm, which reminds me. One time Lazar arrived with no foodie in hand, so we ended up going out. Daddy wanted us to simply buy the food on take out so we headed for Jollibee Kauswagan for the drive through. When we passed by Jollibee Vamenta, Zarelle said she wants us to eat inside, but Daddy said we should just go for the drive through. When we were done with the drive thru, of course we headed back home, passing by Jollibee Vamenta again. We passed by the bridge only to turn back and go to Jollibee Vamenta because Zarelle was about ready to explode. Daddy was a bit reluctant to be bringing the food we ordered from Jollibee Kauswagan so I told him we should just order another set, just a single set for the sake of buying so it wont be much embarrassing to be going inside the Vamenta branch. So there we were, in the corner, eating our foodies when we settled in...

CRABS

This recipe is actually from my best friend Gay C. J., or otherwise known to DTR and Me as Gagay. She had us taste this special crab recipe at one of their fiesta celebrations. And I was so fortunate that one time, she allowed me to peek into the cooking and join her too. That's how I learned to prepare this great foodie. But of course, I recreated and made my version, with my signature in the food.

This is how the crabs looked when they are near the cooked state. Actually this is about done but I just had to simmer the sauce. The ingredients are simple too. All you will need are a.) Crabs, b.) soy sauce, c.) vinegar, d.) onions, e.) garlic and f.) sprite. Unfortunately guys, I cannot tell you how much each ingredient you should put since I do not measure when I cook. I simply use my nose and taste buds for the magic. And of course, the most important ingredient of all is "LOVE". Well, I learned that from my mother and my grandmothers, both Lola Viating and Lola Berta. The three of them often say that when you cook with love, or if you are preparing the food for the people you love, there is magic. And the food transforms itself to being the best tasting food ever....

The beauty of this dish is that you can prepare for a battalion, and if not all of them arrives on time, you simply freeze the dish and reheat when the next batch of hungry warriors arrive.... In fact, I love this dish even when it's cold... well, I wouldn't be called Ice Queen if I don't, hahahaha....
